Edamame Are Eda-Yummay!

I recently stopped by my friends’ house for a visit. Instead of being greeted by a hug and the usual chips and dip, they offered me something else- long, green fuzzy pods known as Edamame. I watched them as they hovered over the bowl sucking the beans out of the pod as if it were their last meal. Not pretty but quite intriguing.

Of course these are good, polite friends so they put some pods in a dish for me, but the fact is we were all just sitting there eating these damn edamame non-stop. I had heard of this “soy bean” before but never took the time to get to know it. Big mista

ke on my part.

Edamame is delicious. As a matter of fact, it has replaced Cape Cod potato chips as my latest snack obsession. Thank goodness, since Edamame is a legume (or, bean) and unlike chips it is very nutritious and low in calories. Plus, it takes longer to eat and is almost a social experience.

Totally Ridiculous Vegetarian Chili

Like I said, I have been doing nothing but cooking and yoga lately. Sooo … guess what I did today?

I was seriously cooking all day.

That on the right is some diced chicken with carrots and onions and garlic cloves and freshy fresh basil. I won’t bother with a recipe on that because it’s just like … whatever whatever. I couldn’t even taste it to see what it needed — I had to bring it to my dad to see what he thought. (I don’t eat sentient creatures, as you all know.)

Reluctant Mexican Bean Salad

So I have a whole bunch of time on my hands lately because I quit my job at the newspaper. Besides the copious amount of yoga and online shopping, I’ve decided to fill my hours with trying new recipes out on my family and

I’ve always said I hate hate hate kidney and black beans. When my dad makes something with kidney beans, like spaghetti sauce or vegetarian chili (my mom and I don’t eat meat), I pitch a fit. My poor, extremely accommodating father is always willing — nay, eager — to cook for me, and I imagine it’s hard to find something nutritious for a girl who doesn’t eat anything sentient. Here’s the thing, though — I’m such a raging bitch about the kidney bean thing, even though in recent years I’ve discovered I like them.

I’m kind of irrational. Sorry, Daddy.

For the past several weeks I have been getting progressively sicker. It started off as just a sore throat and cold, and then turned into fatigue, headaches and swollen glands (I know that swollen gland game far too well). Needless to say, it was time for some blood tests. With all this swine flu stuff you can never be too careful.

This morning I got some blood drawn. The nurse told me it was probably just allergies. I have never suffered from allergies before, but hey, anything is possible. A couple of hours later I get a call with my results. Positive for Mononucleosis!
